Refried Bean Casserole / Lasagna (DF)









I came up with this recipe one night when I was in the mood for refried beans and I had some lasagna noodles I wanted to use !!!  This turned out REALLY good... I made a lasagna out of it.... But it probably would be really good layering it with tortilla shells.  This is on the spicy side !!!

Ingredients:

1 box lasagna noodles (I used rice lasagna noodles)

2 cans refried beans (I used Casa Mamita - no sugar)
1 can corn with liquid
1 small chopped onion
1 small chopped green pepper
1 cup salsa (no sugar)
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp chili powder
1/2 tsp cumin powder

Directions:

Combine all ingredients (except for lasagna noodles) in a bowl and mix until well combined. 

Pour into an 8x8 pan, layering noodles and bean mixture, and bake at 350 degrees for 45-50 minutes.  

This makes a really thick lasagna.  If you want a thinner lasagna - use a regular lasagna pan instead.

You can layer the bean mixture with lasagna noodles or tortilla shells if desired - and then bake.  I layered the refried bean mixture with lasagna noodles and thought it was REALLY good. 

Makes a GREAT filling for a tortilla or taco.

Chocolate Nutty Bars (DF, GF)


These are SOOOOOOOO good - I can't stop eating them.  I am doing the Daniel Fast right now and I needed something sweet !!!!!   This is my 3rd Daniel Fast in about 1-1/2 years.  The 1st was the hardest, it seems like I didn't have any "good" stuff to eat.  The 2nd was easier, and this time is even easier. 

Giving up yeast and sweeteners is HARD for me.   I LOVE bread and I have a BIG sweet tooth.  So I HAD to make something to satisfy my sweet tooth !!!!



Ingredients:

1 cup Unsweetened Shredded Coconut  (I use Bob's Red Mill)
1 cup chopped nuts
1/4 cup peanut butter (no sugar)
1 tsp vanilla extract
1 tsp coconut extract
3/4 cup date syrup

Directions:

Mix everything together in a bowl until thoroughly combined.  Put in an 8x8 pan and pat down.  Put in fridge.  I left mine in the fridge overnight before I had any.


Estimated Nutritional Value per bar based on 16 bars:  Calories 158, Total Fat 8.6g, Cholesterol 0mg,  Sodium 77mg, Carbs 20g, Fiber 2.4g, Sugars 11g, Protein 5.1g

...For now this is how it should be, because we must do all that God wants us to do....

Mint Chocolate Chip ViceCreme



This is my FAVORITE ice cream recipe so far...My niece was visiting for the weekend and I made this for dessert Friday night....She liked the mint chocolate chip vicecreme SOOOO much that she wanted it for breakfast the next morning !!!!!





Ingredients:

1-1/4 cup almond or coconut milk
2 cups soy creamer   
3/4 cup sugar
2 Tbsp Arrowroot Powder  ( I use Bob's Red Mill)
2 - 3 tsp  Peppermint Extract (depending on how strong a mint taste desired)
1-1/2 tsp vanilla extract
1 cup vegan chocolate chips

Directions:

Mix 1/4 cup almond milk with the arrowroot powder and set aside.  Mix the soy creamer, rest of almond milk, and sugar in a saucepan.  Bring to a boil.   When mixture starts to boil, remove from heat.  Add arrowroot mixture, peppermint extract and vanilla extract.  Mix thoroughly.  Let cool slightly and then stir in chocolate chips.  This will help keep the chocolate chips from melting.

Let cool and then make in an ice cream maker. 

I actually have 2 ice cream makers; 1 that uses ice and 1 that doesn't.  I really like them both.  

The Hamilton Beach 68330R 4-Quart Automatic Ice-Cream Maker uses ice.  You can make a bigger batch of vicecreme, and I also think the vicecreme turns out "harder" than the other one.  At first I thought it would be a pain using one with the ice, but it really isn't.

The Cuisinart ICE-21 Frozen Yogurt-Ice Cream & Sorbet Maker does not use ice.  The vicecreme is softer than the other, but still comes out good.  The one thing I found is the bowl really needs to be kept in the freezer for about a week before using it.  There were times I only left it in the freezer a couple of days, and the vicecreme was REALLY soft.  The capacity is much smaller than the one that uses ice.

Herb Potato & Squash Casserole


I just made a quick supper that actually came out pretty good.  I had some squash I needed to use... so this is what I threw together:

4 small sliced zucchini
1 large sliced yellow squash
4 medium sliced potatoes
1/2 cup chopped green pepper
1/2 cup chopped onion
1 tsp Italian seasoning
1 tsp garlic and herb seasoning
1 cup vegan veggie broth

I put everything in a deep frying pan, then sprinkled paprika over everything.  Mix everything together.    Cook on medium heat until the veggies are the desired "done-ness".

Of course I put ketchup on mine (I put ketchup on everything !!!).
