Dried Cucumber Chips




These are SOOOOOO good, I can't stop eating them !!!!  I'm going to end up eating the whole batch in one sitting !!!!   I did not dip these in lemon juice first so they turned a little darker, if you do not want the chips to turn dark, dip them in lemon juice before drying.   But they are still REALLY good even though they turned a little darker !!!




Ingredients:
cucumber, sliced 
1 tsp garlic powder
1/2 tsp lemon pepper
1/4 tsp black pepper


Directions:
Put the sliced cucumber on the mesh sheets on dehydrator trays, in a single layer and so the slices do not overlap.  

Mix the garlic powder, lemon pepper and black pepper together.  Sprinkle the slices with the mixture.

If your dehydrator has a temperature control, set it to 135 degrees.   The average drying time is 5-10 hours.  The drying time is affected by the thickness of the slices, the humidity, the moisture content, how much is being dried.  So you will need to check every once in a while and see how they are drying.

which I ABSOLUTELY LOVE.

Black Bean and Sweet Potato Burgers (DF)




This is the last day of this Daniel Fast. I have to admit it has been challenging to come up with a new recipe for 21 straight days.

I made these for dinner for my third week.  These came out even better than I hoped !!!!  These are now my NEW favorite veggie burgers.   My previous favorite were these veggie burgers.  Although these are still my husband's favorites....I make them constantly to have on hand for him.... My niece's favorite burgers are the Spinach Burgers.   I have now changed my favorite to this recipe!!!


Ingredients:
1 can black beans, drained and rinsed
1 and 1/4 cups cooked mashed sweet potatoes
3/4 cup pecans, chopped
1/4 cup Wheat Gluten
1 small onion, chopped
1 tsp minced jar garlic
1 tsp onion powder
1 tsp garlic powder
1 Tbsp dried cilantro
1 and 1/2 tsp cumin
1 tsp ground ginger
1/2 tsp assorted chili peppers spice (I used  Nanami Togarashi   ) or use 1/4 tsp tabasco sauce and 1/2 tsp chili powder


Directions:
In a bowl, mash the beans to desired texture.   Mix in all the rest of the ingredients.

Form into patties and cook.  I cook them on my  Cuisinart 5-in-1 Griddler for about 20 minutes.  If you want to bake them in the oven, bake at 350 for 20-30 minutes.

Daniel Fast Peanut Butter Muffins (GF)




This is Day 20 of my Daniel Fast.  

As with all Daniel Fast muffins, since you can not use any leavening agents (baking powder or baking soda),  they do not rise like "regular" muffins - resulting in a denser muffin.  

My "guinea pig" testers thought these muffins were REALLY good !!!  There wasn't a muffin left !!!

The batter will be thick when putting into the muffin pan.


Ingredients:
1/3 cup Oat Flour
1/3 cup Corn Flour
1/3 cup Potato Starch
1 cup Quaker Quick Oats
2 Tbsp Ground Flaxseed (I use Bob's Red Mill)
1 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp ground ginger
1/2 tsp ground cardamom
1/4 tsp ground nutmeg
1/2 tsp pumpkin pie spice
--------
1/2 cup peanut butter (no sugar) - I used chunky
2 medium to large very ripe bananas, mashed
1 tsp vanilla extract
1 cup unsweetened applesauce
1/3 cup  date syrup 

Directions:
Mix the peanut butter, bananas, vanilla, applesauce,  and date syrup in one bowl. 

Mix the dry ingredients in another bowl.    

Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  

Pour into muffin pan.   Bake at 350 degrees for about 20-25 minutes or until toothpick inserted in the center comes out clean. 

I like using the silicone bakeware for my muffins.  The muffins  come out so easily and I don't need to grease the pan.  My favorites are:   Casabella Silicone Standard Muffin Pan,Casabella Silicone Large Muffin Pan, Casabella Jumbo Muffin Cups.

The OXO Large Scoop is GREAT for scooping out batter into the muffin pan.  It is MUCH neater than when I used a spoon to scoop the batter into the pan - I no longer get batter all over the muffin pan !!!

Daniel Fast Strawberry Oat Muffins (GF)




This is Day 19 of my Daniel Fast.

As with all Daniel Fast muffins, since you can not use any leavening agents (baking powder or baking soda),  they do not rise like "regular" muffins - resulting in a denser muffin.


Ingredients:
1 cup Quaker old fashioned oats
1/3 cup Oat Flour
1/3 cup Corn Flour
1/3 cup corn starch
1 tsp ground cinnamon
1/2 tsp ground nutmeg
--------
3/4 cup unsweetened applesauce  
2 medium to large very ripe bananas, mashed (if your bananas are small, you may need to increase the applesauce to 1 cup)
1/3 cup date syrup 
1 tsp vanilla extract
10 large fresh strawberries

Directions:
Pulse the strawberries a few times in a mini-processor to chop them into smaller pieces.

Mix applesauce, mashed bananas, date syrup, vanilla extract and strawberries in one bowl. 

Mix the dry ingredients in another bowl.    

Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  

Pour into muffin pan and bake at 350 degrees for about 20-25 minutes or until toothpick inserted in the center comes out clean.

Banana Blueberry Grape Smoothie (DF, GF)





This is Day 18 of my Daniel Fast.  

This makes a great breakfast or lunch or snack.  This is thick.... I ate it with a spoon !!! 





Ingredients:
2 bananas, sliced
1 pint (2 cups) blueberries
1 cup grapes


Directions:
Put bananas,  blueberries and grapes in a blender and blend until smooth and creamy.  


My favorite food processor is the KitchenAid  7-Cup Food Processor

For blenders, I use both the  Vitamix Blender and Ninja Master Prep Professional Blender

Coconut Date 'n Nut Balls (DF, GF)




This is Day 17 of my Daniel Fast.  

I made these to have as a snack during my third week.  I took some into my co-workers... these were their favorite "Daniel Fast snack balls !!!"


Ingredients:
2 cups walnuts
1 cup Unsweetened Shredded Coconut  (I use Bob's Red Mill)
10 dates
1 Tbsp Hershey's Unsweetened Cocoa Powder
1/4 cup water (you may need to add 1-2 more Tbsp if your dates are dry)

Directions:
Blend everything together in a blender until desired consistency. 

Form into balls and store in fridge.  Each day these balls tend to get more flavorful.  I like these better after they have been in the fridge overnight.

My favorite food processor is the KitchenAid  7-Cup Food Processor

For blenders, I use both the  Vitamix Blender and Ninja Master Prep Professional Blender

Kidney Bean Salad (Cashew Mayo)




This is Day 16 of my Daniel Fast.  

This salad is quick and easy to make.   This is great for a side dish or for lunch.  I personally liked this at room temperature.





Ingredients:
2 cans red kidney beans, drained and rinsed 
1 cup celery, chopped
1 cup onion, chopped
1/4 to 1/2 cup Cashew Mayo
1/2 tsp onion powder
1/2 tsp garlic powder
1/8 tsp garam marsala

Directions:

Mix everything together in a bowl - serve immediately or after it has been in the fridge.  I thought it tasted better after it had been refrigerated first.

Dried Cinnamon Apple Slices





This is Day 15 of my Daniel Fast.  

I made these to snack on for my third week.  These are a tasty treat !!!!  My husband even likes these - he actually ate most of them  !!!!





Ingredients:
apples, sliced (about 1/4" thick slices)
1/2 cup water
1/4 cup lemon juice
ground cinnamon 


Directions:
Mix the water and lemon juice in a bowl.  Place the apple slices in the bowl and let soak for 3-5 minutes.

Put the sliced apple on the mesh sheets on dehydrator trays, in a single layer and so the slices do not overlap.  Sprinkle the slices with the cinnamon.

Banana Chocolate Peanut Butter Smoothie (DF, GF)




This is Day 14 of my Daniel Fast.  One more week to go !!!

This makes a great breakfast or lunch or snack.   This is REALLY thick....I ate it with a spoon !!!  If you want it thinner, reduce the peanut butter to 2 Tbsp (or reduce the cocoa powder to 1 Tbsp or add more liquid).



Ingredients:
2 bananas, sliced
2 Tbsp Hershey's Unsweetened Cocoa Powder
1/4 cup peanut butter (no sugar)
1/4 cup water 

Directions:

Put bananas, cocoa powder, peanut butter and water in a blender and blend until smooth and creamy.  You may need to add more liquid if you do not have a high-powered mixer.

My favorite food processor is the KitchenAid  7-Cup Food Processor

For blenders, I use both the  Vitamix Blender and Ninja Master Prep Professional Blender

10 large strawberries
1 cup red grapes

Put bananas, strawberries and grapes in a blender and blend until smooth and creamy.

Daniel Fast Blueberry Oat Muffins (GF)




This is Day 12 of my Daniel Fast.

Ingredients:

1/2 tsp cardamom
--------
1 cup unsweetened applesauce  
2 medium to large very ripe bananas, mashed
1/3 cup date syrup 
1 tsp vanilla extract
1 and 1/3 cup fresh blueberries

Directions:

Mix applesauce, mashed bananas, date syrup, vanilla extract and blueberries in one bowl. 

Mix the dry ingredients in another bowl.    


Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  


Pour into muffin pan and bake at 350 degrees for about 20-25 minutes or until toothpick inserted in the center comes out clean.
