Multi Grain Muffins




These came out REALLY REALLY good.  They remind me of rye bread, but in a muffin !!!

I liked them warmed with peanut butter on them.  My co-workers liked them and thought they were good, but they did wish they had butter, jelly, jam or honey to spread on them.

The recipe is adapted from this recipe.


Ingredients:
3/4 cup whole wheat flour (I use Bob's Red Mill Whole Wheat Flour )
1/2 cup Oat Bran (I use Bob's Red Mill)
1/2 cup  Rye Flour  (I use Bob's Red Mill) 
1/4 cup Cornmeal (I use Bob's Red Mill) 
1/4 cup Sucanat  (I use Barry Farm)  (or brown sugar)
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 Tbsp Hershey's Unsweetened Cocoa Powder
1 tsp ground cinnamon
1/2 tsp ground garam masala

2 Tbsp molasses
1 cup almond milk
1/4 cup unsweetened applesauce
1 tsp vanilla extract
1 vegan egg replacer (I use Ener-G Egg Replacer)

Directions:
Mix the molasses, milk, applesauce, vanilla and egg replacer in one bowl. 

Mix the dry ingredients in another bowl.    

Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  

Pour into muffin pan and bake at 350 degrees for about 20-25 minutes or until toothpick inserted in the center comes out clean.  

I like using the silicone bakeware for my muffins.  The muffins  come out so easily and I don't need to grease the pan.  My favorites are:   Casabella Silicone Standard Muffin PanCasabella Silicone Large Muffin Pan, Casabella Jumbo Muffin Cups.

The OXO Large Scoop  is GREAT for scooping out batter into the muffin pan.  It is MUCH neater than when I used a spoon to scoop the batter into the pan - I no longer get batter all over the muffin pan !!!

Mango Banana Coconut Smoothie (DF, GF)




 I decided to try  mango and banana with coconut !!!  I REALLY like it.



Ingredients:
2 very ripe bananas, sliced 
1/4 cup Unsweetened Shredded Coconut  (I use Bob's Red Mill)
1 mango, chopped
1/4 tsp vanilla extract
1/4 to 1/2 cup unsweetened almond milk (optional)

Directions:
Put everything in a blender and blend until smooth and creamy.  


My favorite food processor is the KitchenAid  7-Cup Food Processor

For blenders, I use both the  Vitamix Blender and Ninja Master Prep Professional Blender

Mango Pineapple Chia Seed Pudding (DF, GF)




My taste tester LOVED this...she gave it an A+ and wanted more of it !!!

You can eat this as a snack or for dessert.  It does not have an intense mango or pineapple taste.

This is a GREAT way to eat more chia seeds, which are high in fiber, Omega-3 fatty acids, calcium, manganese, phosphorus, and protein.

This recipe is adapted from this recipe.  


Ingredients:
1 cup unsweetened  apple juice
4 Tbsp Chia Seeds (I use Bob's Red Mill)
1/2 cup mango, chopped
1/2 cup pineapple, chopped


Directions:
Blend the mango and pineapple with  1/4 cup of the apple juice in a blender until smooth.

Put all the ingredients into a glass jar with tight fitting lid and stir or shake until well combined.   
Then refrigerate for a few hours or overnight (shake or stir occasionally).

For blenders, I use both the  Vitamix Blender and Ninja Master Prep Professional Blender

Vegetable Stir Fry on Rice Noodles (GF)




This is another recipe from my brother.  This is SOOOOO good.  Everyone at dinner LOVED this (including me)!!!!  There were NO leftovers (ALWAYS a good sign that people liked it !!!!!)





Ingredients:

Vegetables:
garlic, chopped
ginger, chopped
onions, sliced
carrots, sliced
celery, chopped
green and red bell pepper, sliced
mushrooms, sliced
green onions, sliced
cucumbers, sliced (you could use squash instead)
========
1 - 8oz bag of Rice Sticks (Noodles)
========
Sauce:
4 Tbsp soy sauce
2 tsp sugar
2 tsp corn starch
1/2 to 2/3 cup water (or veggie broth)
1 tsp sesame oil
1 Tbsp Thai style chili sauce (optional)

Directions:
Cook the rice noodles in boiling water for 3 minutes and drain.  Set aside.

Mix sauce ingredients together and set aside.

Cook vegetables (in oil) in a Wok until done.  Cook each in order shown for a few minutes (1st add garlic and ginger and cook for a few minutes, then add onions, celery and carrots and cook for a few more minutes, then add mushrooms and peppers and cook for another couple of minutes, then add green onions and cucumbers and cook another couple of minutes).

After the vegetables are done cooking, add the rice noodles and cook for about 5 minutes.  Then add the sauce and cook until thickened.

Daniel Fast Apple Steel Cut Oat Muffins




The steel cut oats give the muffins a chewy texture.  As with all Daniel Fast muffins, since you can not use leavening agents (baking powder or baking soda),  they do not rise like "regular" muffins - resulting in a denser muffin.  These muffins are better the day after they are made.  Actually, I think ALL muffins taste better the day after they are made !!  

My co-workers REALLY liked these and thought they were DELICIOUS !!!!  They LOVED the apple chunks in them!!




Ingredients:
1 and 1/2 cups whole wheat flour (I use Bob's Red Mill Whole Wheat Flour )
1 cup Steel Cut Oats  (I use Bob's Red Mill)
1 tsp ground cinnamon
1/2 tsp ground nutmeg
--------
1 - 12 oz can apple juice concentrate (no added sugar), thawed
1 tsp vanilla extract
1 and 1/2 cups chopped apples, peeled
2 medium to large very ripe bananas, sliced
4 large dates



Directions:
Blend the bananas, dates,  and 1/2 cup of the apple juice concentrate in a blender or food processor until smooth.  Then mix this with the rest of the  apple juice concentrate, vanilla, and apples in one bowl. 

Mix the dry ingredients in another bowl.    

Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  


Pour into muffin pan and bake at 350 degrees for about 20-25 minutes or until toothpick inserted in the center comes out clean.

Chocolate Peanut Butter Banana Chia Seed Pudding (DF, GF)




This was SOOOOO  good.  My co-workers also liked this !!  I need to start making this on a regular basis - it is GREAT to satisfy a sweet tooth !!!   Eat it as a snack or for dessert.  This was smoother because of blending the banana and peanut butter before mixing in with the chia seeds and milk.  

This is a GREAT way to eat more chia seeds, which are high in fiber, Omega-3 fatty acids, calcium, manganese, phosphorus, and protein.


This recipe is adapted from this recipe.  


Ingredients:
1 and 1/4 cup unsweetened almond milk
1/4 cup Chia Seeds (I use Bob's Red Mill)
2 tsp Hershey's Unsweetened Cocoa Powder

2 dates
2 Tbsp peanut butter

Directions:
Blend the banana, dates, peanut butter and 1/4 cup of the milk in a blender until smooth.

Put all the ingredients into a glass jar with tight fitting lid and stir or shake until well combined.   

Then refrigerate for a few hours or overnight (shake or stir occasionally).

Quinoa Sweet Potato Black Bean Casserole (DF, GF)




This came out SOOOO good.   It tasted GREAT as a side dish or as a filling for a burrito.  My taste tester thought this was REALLY good !!


Ingredients:
2 cups cooked quinoa
3/4 cup salsa (no sugar)
1/2 cup  Nutritional Yeast Flakes  (I use Now Foods) 
1 cup cooked and mashed or cubed or shredded sweet potatoes
1 - 15 oz can black beans, drained and rinsed (no added sugar)
2/3 cup chopped red bell pepper
2 tsp ground cumin
1/4 tsp ground black pepper
1/4 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground cardamom


Directions:
Mix all ingredients together in a bowl until well combined.

Put into a 9x9 pan or a casserole dish.

Bake at 350 degrees until the filling is hot, about 30 mins.

Put all the ingredients into a glass jar with tight fitting lid and stir or shake until well combined.   
Then refrigerate for a few hours or overnight (shake or stir occasionally).

Apple Oat Bran Muffins - Wheat Flour




These came out REALLY REALLY good.  These are nice and moist and have a GREAT flavor.  The dominant flavors are the apple and cinnamon.

The batter is on the thinner side when pouring into the muffin tins.




Ingredients:
1 and 1/2 cups whole wheat flour (I use Bob's Red Mill Whole Wheat Flour )
1 cup Oat Bran (I use Bob's Red Mill)
1/4 cup Sucanat  (I use Barry Farm)  (or brown sugar)
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
--------
1 - 12 oz can apple juice concentrate, thawed
1 tsp vanilla extract
1 and 1/2 cups chopped apples, peeled
2 medium to large very ripe bananas, mashed (about 1 cup)



Directions:

Coconut Peanut Smoothie (DF, GF)




 I LOVE the taste of peanut butter and banana !!!




Ingredients:
2 very ripe bananas, sliced 
1/4 cup unsweetened almond milk
1/4 cup  Unsweetened Shredded Coconut  (I use Bob's Red Mill)
1/2 cup raw peanuts

Directions:
Put everything in a blender and blend until smooth and creamy.  I sprinkled extra shredded coconut on top.
