Chocolate Pudding Mousse (GF) - Tofu Based




I always LOVE chocolate pudding and mousse - so I decided to try my own version.  Well, I obviously liked this.....I ended up eating most of it before I realized I had not taken a picture yet !!!!  SOOOOO, I will have to make it again just to get a picture !!!!

My co-workers LOVED this.  Comments from co-workers:  wicked good, good chocolate flavor, right amount of sweetness, nice creamy consistency.


I actually make the mousse and then leave it in the freezer for about a week before I take it out to eat it.  I think it has a better flavor - this gives it time for all the flavors to "blend together".


Ingredients:
1/2 package Morinu Soft Silken Tofu 
2 Tbsp Hershey's Unsweetened Cocoa Powder
1/2 tsp vanilla extract
1/2 tsp Chocolate Extract (I use OliveNation)
1/4 cup almond milk 
1/3 cup powered sugar 
1/8 tsp salt

Directions:
Put everything in a blender and blend until smooth and creamy.  

Chill before serving and store in fridge.


My favorite food processor is the  KitchenAid  7-Cup Food Processor
For blenders, I use both the  Vitamix Blender and Ninja Master Prep Professional Blender
