Daniel Fast Sweet Potato Pineapple Raisin Muffins (DF, GF)



The pineapple, raisins and sweet potato provide sweetness and moisture to these muffins.  The blend of spices also give the muffins a nice flavor.

This recipe is adapted from this recipe.   One of my co-workers liked this muffin better because she liked having more pineapple and the raisins in the muffin.  I personally liked  this muffin  better because I liked it better with less pineapple !!!!

This is a thick batter.

As with all Daniel Fast muffins, since you can not use leavening agents (baking powder or baking soda),  they do not rise like "regular" muffins - resulting in a denser muffin.




Ingredients:
1 cup Quaker old fashioned oats
1 cup Oat Flour   (I use Bob's Red Mill)
3/4 cup Unsweetened Shredded Coconut  (I use Bob's Red Mill) 
3/4 cup pecans, chopped
3/4 cup raisins
1 and 1/2 tsp ground cinnamon
1/4 tsp nutmeg
1/4 tsp ground cloves
1/4 tsp ground cardamom
1/2 tsp ground ginger
1/4 tsp salt
-------- 
1/4 cup unsweetened applesauce
3/4 cup pineapple tidbits
1 cup mashed sweet potato
1 tsp vanilla extract
2 medium to large very ripe bananas, mashed (about 1 cup)

Directions:
Mix the applesauce, pineapple, sweet potato, vanilla and bananas in one bowl.

Mix the dry ingredients in another bowl.    

Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  

Pour into muffin pan and bake at 350 degrees for about 20-25 minutes or until toothpick inserted in the center comes out clean.  

My favorite food processor is the  KitchenAid  7-Cup Food Processor

For blenders, I use both the  Vitamix Blender and Ninja Master Prep Professional Blender

I like using the silicone bakeware for my muffins.  The muffins  come out so easily and I don't need to grease the pan.  My favorites are:   Casabella Silicone Standard Muffin Pan,Casabella Silicone Large Muffin Pan, Casabella Jumbo Muffin Cups.

Sweet Potato Black Bean Pecan Veggie Burgers (DF)






I liked the Sweet Potato Black Bean Casserole SOOO much, that I decided to make it into a veggie burger.


Ingredients:
1 cup cooked and mashed sweet potatoes
1 cup pecans, chopped
1 cup corn
3 Tbsp tomato sauce (no sugar)
3/4 cup Unsweetened Shredded Coconut  (I use Bob's Red Mill)
2 15-oz cans black beans, drained and rinsed (no added sugar)
1/4 tsp ground black pepper
1 Tbsp garlic powder
1 Tbsp onion powder
1/4 tsp curry powder
1/2 tsp ground ginger
1/4 tsp ground cardamom 
1/2 tsp paprika
1/2 cup flour (NOT white flour)
1/4 cup Ground Flaxseed

Directions:
Mix all the ingredients in a bowl until well combined.

Form into patties and cook.  I cook them on my   Cuisinart 5-in-1 Griddler for about 20 minutes.  If you want to bake them in the oven, bake at 350 for 20-30 minutes.
