Banana Nut Bread (GF)


I have made both the gluten free recipe and the regular recipe for the same group of people. They all thought the regular recipe was good, but the gluten free version was actually better (I agree with them!!!) 


Modified from Banana Nut Bread Using Hemp recipe.
Ingredients:

2 Tbsp Ground Flaxseed  and 6 Tbsp water
1/3 cup applesauce
2/3 cup sugar
1 cup buckwheat flour
1/4 cup millet flour
1/4 cup white rice flour
scant 3 tsp baking powder 
1/2 tsp salt
1 cup mashed ripe bananas
1/4 cup chopped walnuts
heaping 1/4 cup vegan chocolate chips

Directions:

Mix first 3 ingredients with mixer until well blended.  Add in bananas and mix.  

Combine all dry ingredients in a bowl and mix until combined.  Then add dry ingredients to the wet ingredients and mix until well blended.  

Pour into greased loaf pan.  Bake at 300 degrees for about 50 minutes or until a toothpick inserted into the center comes out clean.  Let cool about 15 minutes in pan before removing.

Note:

For non-gluten free, I used:
1-1/4 cups whole wheat flour
1/2 cup all purpose flour
