Lima Bean Barley Soup (DF)





This recipe was adapted from a recipe in Breaking the Food Seduction .






Ingredients:
1 cup dry lima beans, soaked overnight and drained and rinsed
1 onion, chopped
1 bell pepper, chopped
1 cup carrots, sliced (I actually used a can of sliced carrots)
3 stalks celery, chopped
1 cup dry pearl barley
6 cups water or vegetable broth
1 Tbsp minced jar garlic
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp black pepper


Directions:

Put everything in a crockpot and cook on low for 10-12 hours.
