These are SOOOO good - I like the taste of all the goji berries !! The oats give it a granola bar texture. I don't think these have as strong of a peanut butter flavor as the Fruit'n Nutty Peanut Butter Granola bars - maybe because of all the oats.
This recipe was adapted from my Fruit'n Nutty Peanut Butter Granola Bars.
Ingredients:
1 cup almonds, chopped
2 cups Quaker old fashioned oats
1/4 cup Ground Flaxseed
1 cup peanut butter, melted
1/2 cup date syrup
3/4 cup Goji Berries, soaked first (or any other unsweetened dried fruit)
Directions:
Mix everything together in a bowl.
Press into an 8x8 pan and store in fridge. Each day these bars tend to get more flavorful.
