Pinto Bean Hominy Sweet Potato Soup



I like the taste of hominy in soups and chilis - it is more "meaty" than regular corn.   Hominy is corn kernels without their germ and their hull.  It is popular in southern US.

This recipe was adapted from a recipe on a cracker box.



Ingredients:
1 onion, chopped
1 Tbsp minced jar garlic
2 bell pepperschopped
3 stalks celery, chopped
1-1/2 Tbsp chili powder
1 Tbsp cumin
1 Tbsp ground coriander
1 Tbsp Hershey's Unsweetened Cocoa Powder
1/2 tsp Nanami Togarashi or crushed red pepper
3 Tbsp brown sugar
1 can diced tomatoes with liquid (I used fire-roasted diced tomatoes)
1 can hominy with liquid (to make it thicker, drain the liquid)
1 6-oz can of tomato paste
1 29-oz can pinto beans
4 cups water or vegetable broth 
1 sweet potato, peeled and sliced or cubed 

Directions:
Put everything in a crockpot and cook on low for 10-12 hours.
