Crunchy Peanut Butter Coconut Balls




These have the taste of chocolate and peanut butter along with a crunch from the corn flakes.   I liked these better right out of the freezer.



Ingredients:
3 cups Corn Flakes cereal, crushed
1 cup Unsweetened Shredded Coconut  (I use Bob's Red Mill)
1/3 cup date syrup  
1 cup peanut butter
2 Tbsp Hershey's Unsweetened Cocoa Powder
2 Tbsp almond milk

Directions:
Mix everything together in a bowl until well combined.

Form into balls and put in freezer to firm up.  Each day these balls tend to get more flavorful.  I actually stored them in the freezer.  

I've started using the  Farberware Cookie Scoop for forming the snack balls, instead of using my hands.  It is not as messy and the balls are a more uniform size.

Estimated Nutritional Value per ball based on 35 balls:  Calories 80Total Fat 5.4g, Cholesterol 0mg,  Sodium 52mg, Carbs 6.7g, Fiber .9g, Sugars 3g, Protein 2.5g

    Esp after a few days of not being able to stomach much hahahaha!!!!
    I love a bit of added crunch which I sometimes find hard to add into my vegan diet! I don't have any corn flakes on hand but I might have to buy some just for this! hahahaha

    1. LOL !!!!! Hi Sandy !!!!!! I agree... I like the added crunch also !!!! You could try rice crispy cereal if you have that on hand.... I haven't tried it, but it would probably work... or any other crunchy cereal you might have.... BTW.... I broke out the pressure cooker and tried it .. I need to use it more... it was SOOOO fast and wasn't that bad after all !!!! (just like the dehydrator !!!!!!) You have a blessed day also !!!!!!!!

    2. hahahaaa wooooo hooooooooooo! so glad you got dusted off the pressure cooker - we really are helping each other make use of our kitchen gadgets lol!!!!!
      oooo i do have brown rice puffs in the cupboard - might try them with that instead :-)
