This is a very filling breakfast !!! It will keep you from being hungry for hours !!!!
My husband likes this one better than the "take 2" baked oatmeal. This is a little more "crunchy". He also adds maple syrup to his bowl of oatmeal.
This recipe is adapted from this recipe
Ingredients:
4 cups Quaker old fashioned oats
2 and 1/2 cups unsweetened applesauce
4 cups - mixture of apple chunks, sliced bananas, and chopped dates (4 cups total)
3/4 cup raisins
3 Tbsp Ground Flaxseed
2 Tbsp ground cinnamon
1/2 Tbsp vanilla extract
1 cup chopped walnuts (optional)
1/2 tsp salt (optional)
10 oz package frozen spinach (thawed - optional)
========
1 cup unsweetened almond milk
Directions:
Mix all ingredients (except almond milk and coconut if using) in a large bowl. Stir until well combined.
Pour into a 9" x 13" baking dish.
Pour unsweetened almond milk over the top.
If using, sprinkle the coconut on top of the oats.
Bake at 400 degrees for 45 minutes.
