Cashew Rice Loaf (GF, DF)


I always loved meatloaf growing up !!  To me, this recipe tastes  more like meatloaf than other recipes I have made. 


Ingredients:
1 small onion, chopped
1 small red pepper, chopped
2 cups cooked brown rice
3 stalks celery, chopped
1 cup cashew pieces, chopped
1 and 1/2 cups water
2 Tbsp soy sauce
1 tsp garlic salt
2 Tbsp dried parsley
1/4 cup Nutritional Yeast Flakes  (I use Now Foods)
1 Tbsp onion powder
1/2 tsp thyme
1/2 tsp ground celery seed

Directions:

Mix all the ingredients together and pour into a loaf pan.

Bake at 350 degrees for 1 hour.
