Chocolate Brownies - Take 2 (DF)

    


My husband LOVES these brownies.  When not on the Daniel Fast, I have also made these with gluten free flour and they come out fine.  I have also added 1 Tbsp instant coffee for a little different flavor (when not on the Daniel Fast) !


Ingredients:
2 large ripe bananas, sliced
1/2 cup unsweetened almond milk
1 Tbsp vanilla extract
6 large medjool dates, sliced

1 and 1/2 cups whole wheat flour 
1 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon

Directions:
Place the bananas, milk, vanilla and dates in a blender or food processor and blend until smooth.

Mix the flour, cocoa powder, baking soda, salt, and cinnamon in a bowl until well combined.  

Add the wet ingredients to the dry ingredients and mix until well combined.  Batter will be thick.

Spread into an 8x8 pan and bake at 400 degrees for 12 to 15 minutes or until toothpick inserted in the center comes out clean.

Pumpkin Spice Butter / Spread / Hummus - (DF, GF)

   

I intended to make pumpkin spice hummus....BUT.....since I am not a huge pumpkin or pumpkin pie fan, I really didn't like it for my hummus ......SO....my husband tried it on toast as "butter" or "spread" for his toast.  He REALLY liked it on toast !!!   He said it kinda tastes like pumpkin pie and he LOVES pumpkin pie.  SO....try it as hummus or butter on toast or a spread !!!




Ingredients:
1 can pinto beans (drained and rinsed)
1 can pumpkin puree
2 Tbsp pumpkin pie spice
1/4 tsp ground cloves
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1 tsp ground cinnamon
1/8 tsp ground allspice
1 tsp vanilla extract
2 to 4 Tbsp milk,  or more until desired consistency
4 large medjool date (I usually cut into pieces)

Directions:

Place all ingredients in a blender or food processor and blend until desired consistency.  Add more milk, if needed to thin.

Sweet Potato Butter / Spread - (DF, GF)

  

My husband loves this on his toast !  It has a nice sweet potato spice flavor to it !  It keeps in the fridge for a few weeks.




Ingredients:

1 large sweet potato, cooked (between 1 and 1/2 to 2 cups)
1 ripe banana, sliced (about 1/2 cup - can be a little more)
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp pumpkin pie spice
1/4 tsp ground nutmeg
1 large medjool date (I usually cut into pieces)

Directions:

Place all ingredients in a blender or food processor and blend until desired consistency.

Black Bean Hummus - (DF, GF)

  


I am on a hummus kick !  I have been eating an apple every day dipped in hummus, so I am having fun with different hummus flavors !!!

I really like this black bean hummus !!!  It is right up there with my other favorites: Sun Dried Tomato Hummus - Take 2 (DF, GF) and Chocolate Hummus - (DF, GF)




Ingredients:
1 can black beans (drained and rinsed) 
1 tsp minced jar garlic
2 Tbsp lemon juice
1/2 tsp cumin
1/4 tsp chili powder
1 Tbsp dried parsley
1 Tbsp dried cilantro flakes
1/2 tsp paprika (I actually use smoked paprika )
1 tsp onion powder
1/2 tsp salt (optional)
2 to 4 Tbsp water or liquid from beans,  or more until desired consistency (I actually use all the bean liquid)

Directions:
Place all ingredients in a blender or food processor and blend until desired consistency.  Add water or liquid from beans, if needed to thin.
