Black Bean Sweet Potato Corn Soup (DF, GF)




Ingredients:
1 onion, chopped
1 red pepper, chopped
3 celery stalks, chopped
2 Tbsp minced jar garlic
2 sweet potatoes, cubed (I microwaved them some first so they were easier to cube)
2 cans black beans (I used the liquid)
1 can corn (I used the liquid)
1 can tomatoes (I used the liquid) 
1 tsp ground ginger
1 tsp ground coriander
1 tsp cumin
1/2 tsp turmeric
1/2 tsp cinnamon
1/2 tsp nutmeg
2 large or 3 medium dates, chopped
2 Tbsp dried cilantro
1 tsp lemon juice
3 to 4 cups water or veggie broth

Directions:
Put everything in an Instant Pot and cook for 15 minutes on high pressure.

Black-Eyed Peas Spinach Burgers (DF)

 



Ingredients:

1 can black-eyed peas, drained 
1 small onion, chopped
1 small red pepper, chopped
1 can spinach, drained
1 small stalk celery, chopped
2 Tbsp minced jar garlic
1/4 tsp black pepper
  • 1 tsp garlic powder
    1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp basil
  • 1/2 tsp oregano
1 Tbsp dried cilantro

Directions:
In a bowl, mash the beans until desired texture.  I keep a lot of the beans whole.  Mix in all the rest of the ingredients.

 Place in fridge for at least 30 minutes.

Form into patties and cook.  I cook them on my   Cuisinart 5-in-1 Griddler for about 20 minutes.  If you want to bake them in the oven, bake at 350 for 20-30 minutes.
