This gingerbread cake is really good and tasty, it is more on the dense side (not light and fluffy!). This cake gets more flavorful everyday. My husband LOVES it !
Ingredients:
2 and 1/2 cups flour
1/4 cup brown sugar
2 tsp baking powder
2 tsp ground ginger
1 and 1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp nutmeg
1/2 tsp baking soda
1/2 tsp salt
========
2 Tbsp Ground Flaxseed mixed in 6 Tbsp water (let gel)

1 cup molasses
3/4 cup unsweetened applesauce
========
1 cup boiling water
Directions:
Mix the thickened flaxseed gel, molasses and applesauce in one bowl.
Mix the dry ingredients in another bowl.
Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened. Then add the boiling water and stir to completely mix all ingredients.
Pour into an 8x8 pan (I use a silicone pan). Bake at 350 degrees for about 30-40 minutes or until toothpick inserted in the center comes out clean.
