This is GREAT for lunches, picnics or potluck dinners !!!
I actually prefer making this the day before I am going to eat it. The flavor is better after it has been in the fridge overnight.
Ingredients:
1 can corn, drained
1 can black beans, drained and rinsed
1 cucumber, peeled and cut in chunks
1 small onion, chopped
1 red bell pepper, chopped
1 can tomatoes, drained
2 Tbsp dried cilantro
2 Tbsp red wine vinegar
2 Tbsp apple cider vinegar
1 Tbsp lemon juice
1 Tbsp minced jar garlic
1 tsp ground cumin
1 tsp ground coriander
1/4 tsp cayenne pepper
1/4 tsp black pepper
1 tsp celery seed
3 stalks celery, chopped
Directions:
Mix everything together in a bowl - this is better after it has been in the fridge overnight.
