Lentils are a very good source of cholesterol lowering fiber.

2 cans lentils, drained and rinsed
1 large carrot, grated
1 red pepper, chopped

Directions:
Place all ingredients in a bowl and stir to combine - serve immediately or after it has been in the fridge.
