Chocolate Banana Zucchini Bread (GF)




Ingredients:
1 cup Oat Flour
1/2 cup soy flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup Hershey's Unsweetened Cocoa Powder
2 Tbsp Ground Flaxseed   + 6 Tbsp water
1/3 cup Agave Nectar
1/4 cup applesauce
1 cup mashed bananas
1 cup grated zucchini

Directions:
Mix everything together in a bowl and pour into a loaf pan.  

Bake at 350 for 45 - 50 minutes or until a toothpick inserted in the center comes out clean.

Quinoa Beans and Corn Casserole (DF, GF)





Ingredients:

1 cup cooked quinoa
1 can beans, drained and rinsed (I used great northern)
1 can corn with liquid
1 small onion, chopped
1 bell pepper, chopped
1 15 oz can tomato sauce
1 Tbsp  Bragg Liquid Amino
1/2 tsp pepper
1/2 tsp oregano
1/2 tsp garlic and herb seasoning
1 heaping tsp parsley

Directions:

Mix everything together and put in baking dish.  Bake at 350 for 1 hour.

Macaroni Carrot Salad




Ingredients:

2 cups macaroni (before cooking)
3 stalks celery, chopped
1 green pepper, chopped
1 onion, chopped
a handful of baby carrots, chopped
1/2 tsp celery salt
1 tsp whole celery seeds
1/4 tsp salt
1 tsp mustard
3 Tbsp almond milk
1-1/2 Tbsp apple cider vinegar
1 Tbsp sugar
1 tsp dried parsley
1/2 tsp whole mustard seeds
1 cup vegan mayonnaise

Directions:

Mix all ingredients together in a large bowl.

Carrot Raisin Celery Salad



I really like carrot raisin salad.  I usually add more vegan mayonnaise and raisins..I like mine really creamy with lots of raisins !!!!  Sometimes I am lazy and cut up baby carrots instead of shredding carrots.  It looks kinda weird, but the flavor is still good !!

Ingredients:


2 cups shredded or chopped carrots
1 cup chopped celery
1 cup raisins
1 tsp dried parsley
1 cup vegan mayonnaise
1 to 2 Tbsp sugar
2 to 3 Tbsp almond milk

Directions:


Place all ingredients in a bowl and stir to combine.

Unusual post

Hi,

I have never formally introduced myself...my name is Denise.  This is an unusual post....I believe in the power of prayer and I am requesting prayers for my mom, Marie.   We were up visiting my parents and had to take mom to the ER yesterday.  She had emergency brain surgery to remove what the doctor said was a significant amount of blood on her brain.  Thankfully she made it through surgery.  She is in icu and the next 24hrs are critical.  Then they said the next week could be up and down.  She could have good days and bad days.  They are trying to prevent any infections or pneomonia.  I really appreciate all prayers for her...I am hoping and praying she has a speedy recovery and short physical therapy.  Thank you for all the prayers.
