Grape Nuts Mocha Overnight Old-Fashioned Oats




I modified my recipe for Overnight Old-Fashioned Oats  to come up with this recipe.


Ingredients:
1/2 cup Quaker old fashioned oats
3/4 to 1 cup unsweetened almond milk (I use 1 cup)
1 date, chopped
2 Tbsp instant coffee
1 Tbsp Hershey's Unsweetened Cocoa Powder
2 Tbsp peanut butter
1/4 Grape Nuts cereal
1 tsp Chia Seeds (I use Bob's Red Mill)
1 tsp Ground Flaxseed (I use Bob's Red Mill)
1 tsp ground cinnamon
1 Tbsp molasses or date syrup

Directions:
Put all the ingredients into a jar with tight fitting lid and shake until well combined.  I use an "old"  16-oz glass peanut butter jar.    Then refrigerate overnight or for a few nights.  I had mine sit in the fridge for 4 nights and it was delicious the morning I ate it for breakfast.

Warm up in the microwave for about 90 seconds or eat cold.

Daniel Fast Chocolate Spice Steel Cut Oat Muffins (DF, GF)




The steel cut oats give the muffins a chewy texture.  As with all Daniel Fast muffins, since you can not use leavening agents (baking powder or baking soda),  they do not rise like "regular" muffins - resulting in a denser muffin.  These muffins are better the day after they are made.  Actually, I think ALL muffins taste better the day after they are made !!   I LOVE these warmed in the microwave and then spreading peanut butter on top of them !!!  

These muffins got more and more flavorful each day !!  



Ingredients:
1 cup Steel Cut Oats  (I use Bob's Red Mill)
1/3 cup Oat Flour
1/3 cup Corn Flour
1/3 cup White Rice Flour
1/3 cup Tapioca Starch
1/2 tsp ground ginger
1 tsp ground cinnamon
1 tsp ground pumpkin pie spice
1/4 tsp ground cardamom
1/4 tsp ground coriander
1/4 tsp ground cloves
1/4 tsp allspice
1/4 tsp nutmeg
1/4 cup Hershey's Unsweetened Cocoa Powder
1/8 tsp salt
--------
1/4 cup  date syrup 
1 cup unsweetened applesauce
3 medium or 2 large very ripe bananas, mashed (if your bananas are smaller, you will probably need to increase the liquid by 2-4 Tbsp)

Directions:
Mix date syrup, applesauce and mashed bananas in one bowl. 

Mix the dry ingredients in another bowl.    

Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  

Pour into muffin pan and bake at 350 degrees for about 20-25 minutes or until toothpick inserted in the center comes out clean.  

I like using the silicone bakeware for my muffins.  The muffins  come out so easily and I don't need to grease the pan.  My favorites are:   Casabella Silicone Standard Muffin PanCasabella Silicone Large Muffin Pan, Casabella Jumbo Muffin Cups.

The OXO Large Scoop  is GREAT for scooping out batter into the muffin pan.  It is MUCH neater than when I used a spoon to scoop the batter into the pan - I no longer get batter all over the muffin pan !!!

Estimated Nutritional Value per muffin based on 12 muffins:  Calories 130, Total Fat 1.1g, Cholesterol 0mg,  Sodium 25mg, Carbs 29.6g, Fiber 2.8g, Sugars 9g, Protein 2.9g

Daniel Fast Coconut Sweet Potato Muffins - No Flour (DF, GF)




This is Day 21 of my Daniel Fast - the last day for this fast !!!

These are SOOOOOO good.  They have a crunch from the pecans.  I LOVE the coconut flakes in the muffins - I think it gives the muffins a chewier and more "coconut flavor" than the shredded coconut !!!!  These are great for either breakfast or a snack.

I modified a recipe in  The Rice Diet Renewal  to come up with this recipe.



Ingredients:
1 and 1/2 cups Quaker old fashioned oats
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp ground ginger
1/2 cup  Unsweetened Shredded Coconut  (I use Bob's Red Mill)
1/2 cup raisins
1/2 cup pecans, chopped
2 Tbsp Hershey's Unsweetened Cocoa Powder
--------
1 tsp vanilla extract
3 medium very ripe bananas, mashed
1/2 cup cooked sweet potato, mashed
1 cup unsweetened applesauce
1/2 cup date syrup 

Directions:
Mix the vanilla, mashed bananas, sweet potato, applesauce and date syrup  in one bowl. 

Mix the dry ingredients in another bowl.    


Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.

Sweet Potato Chickpea Veggie Soup (DF, GF)




This is Day 20 of my Daniel Fast.

I modified a recipe from a newspaper to come up with this recipe.  This is SOOOO good !!  It has a little spicy flavor from the cayenne pepper, but a little sweet flavor from the allspice.


I think next time I will use 2 cans of chickpeas.  I personally would like more beans in there !!!!!





Ingredients:
1 onion, chopped
1 red pepper, chopped
2 to 3 carrots, sliced (I used a can of carrots with the liquid)
1 Tbsp minced jar garlic
2 sweet potatoes, chopped (I microwaved them some first so they were easier to chop)
1/4 tsp ground allspice
1/4 tsp cayenne pepper
1/2 tsp thyme
4 cups water or veggie broth
1 can tomatoes (I used the liquid) 
1 10-oz package frozen spinach
1 can chick peas/garbanzo beans (I used the liquid)
1 tsp garlic powder
1 tsp onion powder


Directions:
Put everything in a crockpot and cook on low for 10-12 hours.


Estimated Nutritional Value per serving based on 10 servings:  Calories 103, Total Fat .7g, Cholesterol 0mg,  Sodium 292mg, Carbs 20.4g, Fiber 5.8g, Sugars 4.4g, Protein 4.7g

Chocolate Peanut Butter Coconut Banana Smoothie (DF, GF)




This is Day 19 of my Daniel Fast.

This is a thick smoothie, I actually eat it with a spoon !!!   How can you go wrong with chocolate AND peanut butter AND coconut ?????


Ingredients:
2  very ripe bananas, sliced 
1/4 cup  Unsweetened Shredded Coconut  (I use Bob's Red Mill)
1/4 cup peanut butter (no sugar)
1/2 Tbsp Hershey's Unsweetened Cocoa Powder
1/4 cup water or unsweetened almond milk, if desired (I like mine thick so I add very little to none extra liquid) 

Directions:
Put everything in a blender and blend until smooth and creamy.  

My favorite food processor is the KitchenAid  7-Cup Food Processor

For blenders, I use both the  Vitamix Blender and Ninja Master Prep Professional Blender

Peanut Butter Banana Smoothie (DF, GF)




This is Day 18 of my Daniel Fast.

This is a thick smoothie, I actually eat it with a spoon !!!   I LOVE the taste of peanut butter and banana !!!






Ingredients:
2 very ripe bananas, sliced 
2 to 4 Tbsp of water or unsweetened almond milk (depending on how thick you like it...I like it thick, so I use very little water or milk)
1/4 cup peanut butter (no sugar)


Directions:
Put everything in a blender and blend until smooth and creamy.  


My favorite food processor is the KitchenAid  7-Cup Food Processor

For blenders, I use both the  Vitamix Blender and Ninja Master Prep Professional Blender

Green Bean ChickPea Salad (DF, GF)




This is Day 13 of my Daniel Fast.
 

This is a great salad for lunch or as a side dish.






Ingredients:
1 can chickpeas (no sugar), drained and rinsed
2 cans green beans (no sugar), drained
1 small onion, chopped
1 red bell pepper, chopped
1 Tbsp lemon juice
2 Tbsp brown rice vinegar
1/8 tsp ground black pepper
1/8 tsp crushed red pepper (or 1/4 tsp ground black pepper)
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground ginger


Directions:
Mix everything together in a bowl - serve immediately or after it has been in the fridge.  I thought it tasted better after it had been refrigerated first.

Roasted Brussels Sprouts (DF, GF)





This is Day 11 of my Daniel Fast.

I LOVE brussels sprouts.  I think they are especially good when roasted.





Ingredients:
1 16-oz package of frozen brussels sprouts (thawed)
1 and 1/2 tsp garlic pepper salt spice mixture (or use 1/2 tsp ground black pepper, 1/2 tsp salt, 1/2 tsp garlic powder)
1/2 tsp minced jar garlic


Directions:

Put the brussels sprouts and other ingredients in a plastic bag and shake well so the brussels sprouts are evenly coated.

Lightly spray a baking sheet with oil and arrange brussels sprouts in a single layer on the baking sheet.


Bake at 400 degrees for about 35 to 45 minutes.  Brussels sprouts should be darker in color and slightly crispy on the outside but tender inside when done.
