Baked Oatmeal with Sweet Potato (DF, GF)




This is DELICIOUS. My dad LOVES it (he actually eats it cold !!)  This can be eaten as oatmeal for breakfast or as a sweet potato casserole for lunch or dinner.

Adapted from this recipe.


Ingredients:
2 cups  Quaker old fashioned oats
cup chopped walnuts
2 tsp ground cinnamon
3/4 tsp ground nutmeg
1/4 tsp salt
1 cup Unsweetened Shredded Coconut  (I use Bob's Red Mill)

1 cup date syrup 
1 medium to large very ripe banana, mashed 
1 cup unsweetened almond milk  
1 tsp vanilla extract
1/4 cup unsweetened orange juice
1 and 3/4 cups cooked and mashed sweet potato
1/4 cup unsweetened applesauce 

Directions:
Mix the wet ingredients in one bowl. 

Mix the dry ingredients in another bowl.    

Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  

Pour into casserole dish bake at 350 degrees for about 30 minutes or until top is golden brown.

Curry Rice with Chickpeas (DF, GF)




I thought this had a REALLY good flavor - a slight heat from the curry powder.



Ingredients:
1 cup dry brown rice
1 can chickpeas beans, with liquid  
1 Tbsp curry powder
1/2 tsp ground cinnamon
1/4 tsp ground ginger
2 Tbsp dried cilantro flakes
1 and 3/4 cups water
--------
16-oz package of frozen broccoli, cooked

Directions:
Place all ingredients (EXCEPT broccoli) in a rice cooker and cook until done.

Combine rice with cooked broccoli.


I really like the Rival 6-Cup Rice Cooker.   It makes cooking rice SOOO easy.  I just put all the ingredients in the cooker .  So my rice dish is complete with spices and veggies when the rice is cooked.  The 6 cup isn't a big rice cooker, but it is plenty for 2 people.

Baked Oatmeal with Apples (DF, GF)


This is REALLY good. When I warmed it up the next day I did add a little additional milk.  It is a thicker baked oatmeal.  I LOVE the crunch from the walnuts and the sweetness from the raisins.

This is a very filling breakfast !!!  It will keep you from being hungry for hours !!!!



Ingredients:
1 cup chopped walnuts
1 cup raisins
2 tsp ground cinnamon
1/4 tsp salt
1 cup Unsweetened Shredded Coconut  (I use Bob's Red Mill)

3/4 cup date syrup 
1 medium to large very ripe banana, mashed or sliced
1 flax egg (1 Tbsp Ground Flaxseed mixed with 3 Tbsp water)
2 cups unsweetened almond milk 
1 tsp vanilla extract
1/4 cup unsweetened applesauce 
1 and 1/2 cups chopped apples 

Directions:
Mix the wet ingredients in one bowl. 

Mix the dry ingredients in another bowl.    

Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  

Pour into casserole dish bake at 350 degrees for about 30 minutes or until top is golden brown.
