Pumpkin Spice Pecan Muffins (GF)




These are REALLY good... nice and moist.  These are the first pumpkin muffins I've made that have actually come out REALLY good !!!!  My co-workers liked these also.  These and the Apple Oat Bran Muffins  are their favorites !!!  




Ingredients:
1/3 cup Oat Flour
1/3 cup Corn Flour
1/3 cup Potato Starch
2 tsp baking powder
1 tsp baking soda
1/4 cup Sucanat   (or brown sugar)
2 Tbsp Ground Flaxseed
1 tsp ground cinnamon
1/2 tsp ground ginger
1/8 tsp ground nutmeg
1/4 tsp ground cloves
1 and 1/2 tsp pumpkin pie spice
1/4 to 1/2 cup pecans, chopped
--------
2 medium to large very ripe bananas, mashed
1 tsp vanilla extract
1 cup canned pumpkin puree
1/3 cup unsweetened applesauce 


Directions:
Mix the  bananas, vanilla, pumpkin, and applesauce in one bowl. 

Mix the dry ingredients in another bowl.    

Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  

Pour into muffin pan.   Bake at 350 degrees for about 20-25 minutes or until toothpick inserted in the center comes out clean. 

I like using the silicone bakeware for my muffins.  The muffins  come out so easily and I don't need to grease the pan.  My favorites are:   Casabella Silicone Standard Muffin Pan,Casabella Silicone Large Muffin Pan, Casabella Jumbo Muffin Cups.


The OXO Large Scoop is GREAT for scooping out batter into the muffin pan.  It is MUCH neater than when I used a spoon to scoop the batter into the pan - I no longer get batter all over the muffin pan !!!

Crunchy Peanut Butter Coconut Balls




These have the taste of chocolate and peanut butter along with a crunch from the corn flakes.   I liked these better right out of the freezer.



Ingredients:
3 cups Corn Flakes cereal, crushed
1 cup Unsweetened Shredded Coconut  (I use Bob's Red Mill)
1/3 cup date syrup  
1 cup peanut butter
2 Tbsp Hershey's Unsweetened Cocoa Powder
2 Tbsp almond milk

Directions:
Mix everything together in a bowl until well combined.

Form into balls and put in freezer to firm up.  Each day these balls tend to get more flavorful.  I actually stored them in the freezer.  

I've started using the  Farberware Cookie Scoop for forming the snack balls, instead of using my hands.  It is not as messy and the balls are a more uniform size.

Chocolate Mint Overnight Old-Fashioned Oats (DF,GF)



I combined my recipe for Overnight Old-Fashioned Oats with these overnight oat recipes to come up with this recipe.  This has a pretty strong mint flavor, reduce the Peppermint Extract  to 1/4 tsp for a less minty flavor.


Ingredients:
1/2 cup Quaker old fashioned oats
1 cup unsweetened almond milk
1/2 banana, mashed
1/2 tsp Peppermint Extract  (I use Nielsen-Massey)
1 Tbsp Hershey's Unsweetened Cocoa Powder
1 tsp Chia Seeds (I use Bob's Red Mill)
1 tsp Ground Flaxseed (I use Bob's Red Mill)
1 Tbsp peanut butter

Directions:
Put all the ingredients into a jar with tight fitting lid and shake until well combined.   I use an "old" 16-oz glass peanut butter jar. Then refrigerate overnight or for a few nights.  I had mine sit in the fridge for 4 nights and it was delicious the morning I ate it for breakfast.

Warm up in the microwave for about 90 seconds or eat cold.

Sweet Potato Black Bean Casserole (DF,GF)




This came out SOOOO good.   It tasted GREAT as a side dish or as a filling for a burrito.  This also makes a GREAT topping to put on rice.

My aunt made this and used 3 cups of cubed sweet potatoes instead of the mashed sweet potatoes.  She liked the added texture of the cubed sweet potatoes.









I made it again using cubed sweet potatoes instead of mashed....here is that photo.




Ingredients:

3 cups cooked and mashed sweet potatoes
--------
1 can corn, drained (no sugar)
1 can sliced carrots, drained (no sugar)
2 - 15 oz cans black beans, drained and rinsed (no sugar)
2 Tbsp unsweetened almond milk
1/2 tsp ground cinnamon
1/2 tsp ground allspice
1/2 tsp ground nutmeg
1/4 tsp pepper
1/2 tsp cumin
1 med onion, chopped
1 - 8 oz can tomato sauce (no sugar)



Directions:
Mix all ingredients (EXCEPT sweet potatoes) together in a bowl until well combined.

Put into a 9x13 pan or a casserole dish.


Spread the mashed potatoes evenly on top of the mixture.
Bake at 350 degrees until the filling is hot, about 40 mins.

Kidney Beans Quinoa Sweet Potato Spinach Burgers (DF, GF)





Even though these are good, my favorite is still the Black Bean and Sweet Potato Burgers and these are still my husband's favorites.



Ingredients:
1 can kidney beans, drained and rinsed
2/3 cup cooked mashed sweet potatoes
1 cup cooked  Quinoa
1/2 cup canned spinach
1 small onion, chopped
1 tsp minced jar garlic
1 Tbsp dried cilantro
1 and 1/2 tsp cumin
1 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp chili powder
1/2 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1/4 tsp black pepper
1/4 tsp assorted chili peppers spice (I used  Nanami Togarashi   ) or use 1/4 tsp tabasco sauce or additional 1/4 tsp chili powder
1/3 cup Potato Flour


Directions:
In a bowl, mash the beans to desired texture.   Mix in all the rest of the ingredients.

Form into patties and cook.  I cook them on my   Cuisinart 5-in-1 Griddler for about 20 minutes.  If you want to bake them in the oven, bake at 350 for 20-30 minutes.

Peanut Butter Wheat Germ Coconut Raisin Balls



These are REALLY good.  I took them into work.  The "taste testers" liked them and thought they were REALLY good... BUT... their FAVORITE so far are the Chocolate Dried Apple Balls.  

Ingredients:
3/4 cup natural peanut butter (no added sugar)
1/2 cup date syrup 
1 cup wheat germ
3/4 cup Vegan Soy Powder
1/4 cup sunflower seeds 
1 cup raisins
1 banana
1/2 cup vegan chocolate chips
1/4 to 1/3 cup almond milk (depending on how dry your mixture is)
1 cup Unsweetened Shredded Coconut  (I use Bob's Red Mill)
2 Tbsp Ground Flaxseed

Directions:
Place all ingredients in a blender and blend until well combined. 

Place mixture in the freezer until firm.  Then form into balls.  Store in freezer - they tend to get sticker at room temperature.  Each day these balls tend to get more flavorful.

My favorite food processor is the KitchenAid  7-Cup Food Processor

For blenders, I use both the  Vitamix Blender and Ninja Master Prep Professional Blender

Peanut Butter Grape Nut Muffins




These are REALLY good... nice and moist... a slight peanut butter  and cinnamon flavor with crunch from the Grape Nuts.  I took some into my co-workers and the LOVED them !!!  They said they were SOOOO good.




Ingredients:
1/3 cup Oat Flour
1/3 cup Corn Flour
1/3 cup Potato Starch
1 cup Grape Nuts cereal
2 tsp baking powder
1 tsp baking soda
2 Tbsp Ground Flaxseed
1 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp ground ginger
1/2 tsp ground cardamom
1/4 tsp ground nutmeg
1/2 tsp pumpkin pie spice
--------
1/2 cup peanut butter (no sugar) - I used chunky
2 medium to large very ripe bananas, mashed
1 tsp vanilla extract
1 cup unsweetened applesauce
1/3 cup almond milk
1/3 cup  date syrup 

Directions:
Mix the peanut butter, bananas, vanilla, applesauce, almond milk  and date syrup in one bowl. 

Mix the dry ingredients in another bowl.    

Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  

Pour into muffin pan.   Bake at 350 degrees for about 20-25 minutes or until toothpick inserted in the center comes out clean. 

I like using the silicone bakeware for my muffins.  The muffins  come out so easily and I don't need to grease the pan.  My favorites are:   Casabella Silicone Standard Muffin Pan,Casabella Silicone Large Muffin Pan, Casabella Jumbo Muffin Cups.

Gingerbread Muffins (GF) - Take 2





These came out REALLY REALLY good.  These are nice and moist and have a GREAT flavor.  My bible-study "guinea pig" testers REALLY liked these and thought they were REALLY good.




Ingredients:
1/2 cup Oat Flour
1/2 cup Corn Flour
1/2 cup Potato Starch
2 tsp baking powder
1 tsp baking soda
1/2 tsp ground ginger
1 tsp cinnamon
1/4 tsp ground allspice
--------
1/2 cup molasses
1/3 cup almond milk
1 tsp vanilla extract
2 medium to large very ripe bananas, mashed

Directions:
Mix molasses, almond milk,  vanilla and mashed bananas in one bowl. 

Mix the dry ingredients in another bowl.    

Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  

Pour into muffin pan and bake at 350 degrees for about 20-25 minutes or until toothpick inserted in the center comes out clean.  I only got 10 muffins because I was making them a little larger.
