Sweet Potato Pecan Casserole




This came out SOOOO good.   I have made this for 3 group dinners and several people commented on how good it was.  Every time I brought back an empty dish - there were no leftovers !!  This is ALWAYS a good sign that people liked the food !!!!








Ingredients:
4 cups cooked and mashed sweet potatoes
3/4 tsp ground nutmeg
3/4 tsp ground cinnamon
1/4 cup unsweetened almond milk
1/4 cup orange juice
1 tsp vanilla extract
1/4 cup sugar
1/4 cup maple syrup

Topping:
1/4 cup unsweetened applesauce
1/2 cup brown sugar
1/3 cup flour
3/4 cup pecans, chopped
2 Tbsp maple syrup

Directions:
Mix all ingredients (EXCEPT Topping ingredients) together in a bowl until well combined.

Pour mixture into a casserole dish.

Mix the Topping ingredients together in a bowl until well combined.  Spread mixture over the sweet potato mixture.


Bake at 350 degrees until hot, about 35 - 45 mins.
