Veggie Chili (DF, GF)

1 onion, chopped
1 red pepper, chopped
2 Tbsp minced jar garlic
1 4-oz can diced green chiles
3 cans red kidney beans, with liquid
1 can corn, with liquid
1 15-oz can diced tomatoes, with liquid
1 15-oz can tomato sauce
1 cup dry quinoa
1 tsp oregano
1 Tbsp ground cumin
1 Tbsp chili powder
1 Tbsp paprika
1 tsp thyme

Put all ingredients in an electric pressure cooker and cook on high pressure for 45 minutes.  Release pressure naturally.
