Bean and Quinoa Chili (DF, GF)





You can cook this for the lower amount of time (8 hours) and have it more like soup, or cook at for the upper amount of time (12 hours) and have it thicker - like chili.  I prefer it thicker !!



Ingredients:
2 tsp minced jar garlic
1 onion, chopped
1 red bell pepper, chopped
1 6-oz can of tomato paste
3 cans black beans, with liquid
1/2 cup uncooked quinoa
2 large dates, chopped
1 15-oz can pumpkin puree
1/2 tsp salt
2 Tbsp chili powder
2 tsp ground cumin
1/4 tsp black pepper
1 Tbsp Hershey's Unsweetened Cocoa Powder
2 to 3 cups water or veggie broth
1 can corn, with liquid


Directions:
Place all ingredients in a crockpot and cook on low for 8 to 12 hours or high for 4 to 6 hours.
