Lentils and Rice (DF, GF)




This was GOOD !!!  I LOVED the spinach in with the lentils and rice.  This has a bit of "heat" at the end,  so reduce or eliminate the cayenne pepper if desired.


Comments from taste testers:  Good flavor and texture.  I REALLY like this.  This is REALLY good.



Ingredients:
1 cup dry brown rice (I used brown rice and wild rice)
1 can lentils, with liquid 
1 onion, chopped
1 red pepper, chopped
1/2 tsp salt
1/4 tsp ground black pepper
3/4 tsp ground cumin 
1/4 tsp cayenne pepper 
1 cinnamon stick
1 tsp minced jar garlic
1 10-oz package frozen spinach
1 cup water
1/3 cup almond slivers or pine nuts (optional)

Directions:
Place all ingredients in a rice cooker and cook until done.


I really like the Rival 6-cup Rice Cooker w/Steamer.   It makes cooking rice SOOO easy.  I just put all the ingredients in the cooker .  So my rice dish is complete with spices and veggies when the rice is cooked.  The 6 cup isn't a big rice cooker, but it is plenty for 2 people.

    1. HI Sarah !! THANKS for your question !

      I would cook the rice, lentils, onion, cinnamon stick and red pepper in a pan on the stove and cook the spinach in the microwave or on top of the stove - and then I would just combine all the ingredients in a bowl and warm up on the stove or in microwave.

      If you have an instant pot, you could put everything in that and cook on the rice setting.
