Daniel Fast Apple Steel Cut Oat Muffins




The steel cut oats give the muffins a chewy texture.  As with all Daniel Fast muffins, since you can not use leavening agents (baking powder or baking soda),  they do not rise like "regular" muffins - resulting in a denser muffin.  These muffins are better the day after they are made.  Actually, I think ALL muffins taste better the day after they are made !!  

My co-workers REALLY liked these and thought they were DELICIOUS !!!!  They LOVED the apple chunks in them!!




Ingredients:
1 and 1/2 cups whole wheat flour (I use Bob's Red Mill Whole Wheat Flour )
1 cup Steel Cut Oats  (I use Bob's Red Mill)
1 tsp ground cinnamon
1/2 tsp ground nutmeg

1 - 12 oz can apple juice concentrate (no added sugar), thawed
1 tsp vanilla extract
1 and 1/2 cups chopped apples, peeled
2 medium to large very ripe bananas, sliced
4 large dates



Directions:
Blend the bananas, dates,  and 1/2 cup of the apple juice concentrate in a blender or food processor until smooth.  Then mix this with the rest of the  apple juice concentrate, vanilla, and apples in one bowl. 

Mix the dry ingredients in another bowl.    

Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  


Pour into muffin pan and bake at 350 degrees for about 20-25 minutes or until toothpick inserted in the center comes out clean.  

My favorite food processor is the  KitchenAid  7-Cup Food Processor

For blenders, I use both the  Vitamix Blender and Ninja Master Prep Professional Blender

I like using the silicone bakeware for my muffins.  The muffins  come out so easily and I don't need to grease the pan.  My favorites are:   Casabella Silicone Standard Muffin PanCasabella Silicone Large Muffin Pan, Casabella Jumbo Muffin Cups.


The OXO Large Scoop  is GREAT for scooping out batter into the muffin pan.  It is MUCH neater than when I used a spoon to scoop the batter into the pan - I no longer get batter all over the muffin pan !!!


Estimated Nutritional Value per muffin based on 11 muffins:  Calories 142Total Fat .7g, Cholesterol 0mg, Sodium  3mg, Carbs 31.1g, Fiber 2.6g, Sugars  9.6g, Protein 3.1g

  2. Hi can we try dehydrated apples which are dried in dehydrator?

    I'm just exploring some dehydrated recipes. Looks like the recipe is easy to try. It seems like I can replace apples with dried apples but I'm not sure how it turns out.

      I have not used dried apples in any muffin recipe so I can not say how they would turn out.

      I have used them in a snack ball recipe and they tasted great and people loved them - http://pink-vegan.blogspot.com/2013/08/chocolate-coconut-dried-apple-balls.html . But these are not Daniel Fast.

      I would try them in the muffin recipe - just might need to add some more liquid since the dried apples will not have as much moisture as regular apples.

    1. Hi, I've heard you can substitute white grape juice concentrate. You might be able to use apple juice instead but reduce the amount.
