Banana Nut Bread (GF)

I have made both the gluten free recipe and the regular recipe for the same group of people. They all thought the regular recipe was good, but the gluten free version was actually better (I agree with them!!!)

Modified from Banana Nut Bread Using Hemp recipe.
Ingredients:

2 Tbsp Ground Flaxseed  and 6 Tbsp water
1/3 cup applesauce
2/3 cup sugar
1 cup buckwheat flour
1/4 cup millet flour
1/4 cup white rice flour
scant 3 tsp baking powder
1/2 tsp salt
1 cup mashed ripe bananas
1/4 cup chopped walnuts
heaping 1/4 cup vegan chocolate chips

Directions:

Mix first 3 ingredients with mixer until well blended.  Add in bananas and mix.

Combine all dry ingredients in a bowl and mix until combined.  Then add dry ingredients to the wet ingredients and mix until well blended.

Pour into greased loaf pan.  Bake at 300 degrees for about 50 minutes or until a toothpick inserted into the center comes out clean.  Let cool about 15 minutes in pan before removing.

Note:

For non-gluten free, I used:
1-1/4 cups whole wheat flour
1/2 cup all purpose flour

Everything is possible with God

Basic Hummus (DF, GF)

Ingredients:

1 can chickpeas (drained and rinsed)
1 tsp minced jar garlic
2 Tbsp tahini
1 Tbsp lemon juice
1/2 tsp paprika
1/4 tsp salt
1/8 tsp cumin
1 tsp dried parsley
2 to 4 Tbsp water or liquid from beans,  or more until desired consistency

Directions:

Place all ingredients in a blender or food processor and blend until desired consistency.  Add water or liquid from beans, if needed to thin.

My favorite food processor is the KitchenAid  7-Cup Food Processor.

For blenders, I use both the  Vitamix Blender and Ninja Master Prep Professional Blender

Spicy Hummus (DF, GF)

This hummus is on the spicy side.  For me, the "basic" hummus recipe was too bland and I wanted something a little spicier.   I also sprinkled paprika on top.

Ingredients:

1 can chickpeas (drained and rinsed)
2 tsp minced jar garlic
1 Tbsp tahini
1 Tbsp lemon juice
1 tsp paprika
1/4-1/2 tsp crushed red pepper
1/2 tsp cumin
1/2 tsp salt (this last time I actually used garlic salt)
1 - 2 Tbsp water or liquid from beans,  if needed

Directions:

Place all ingredients in a blender or food processor and blend until desired consistency.  Add water or liquid from beans, if needed to thin.

Coffee ViceCreme

I always LOVED coffee ice cream so was VERY excited when this vegan version actually tasted REALLY good....I no longer missed the dairy version !!!!

Ingredients:

1 and 1/4 cup almond milk
2 cups soy creamer
3/4 cup sugar
2 Tbsp instant coffee
2 Tbsp Arrowroot Powder  ( I use Bob's Red Mill)
1-1/2 tsp vanilla extract

Directions:

Mix 1/4 cup almond milk with the arrowroot powder and set aside.  Mix the soy creamer, rest of almond milk, instant coffee and sugar in a saucepan.  Bring to a boil.  Let boil for about 2 minutes - stirring constantly.   Remove from heat.  Add arrowroot mixture, coffee extract and vanilla extract. Stir for a minute or two for the mixture to thicken.

Let cool and then make in an ice cream maker.

I actually have 2 ice cream makers; 1 that uses ice and 1 that doesn't.  I really like them both.

The Hamilton Beach 68330R 4-Quart Automatic Ice-Cream Maker uses ice.  You can make a bigger batch of vicecreme, and I also think the vicecreme turns out "harder" than the other one.  At first I thought it would be a pain using one with the ice, but it really isn't.

The Cuisinart ICE-21 Frozen Yogurt-Ice Cream & Sorbet Maker does not use ice.  The vicecreme is softer than the other, but still comes out good.  The one thing I found is the bowl really needs to be kept in the freezer for about a week before using it.  There were times I only left it in the freezer a couple of days, and the vicecreme was REALLY soft.  The capacity is much smaller than the one that uses ice.

We know that all things work together for the good of  those who love God...

Roasted Squash

I really like the taste of oven roasted vegetables.  They are a good change from steamed vegetables.

Ingredients:

one pound (or a little over) of yellow squash or zucchini, thinly sliced
1 tsp dried basil
1/2 tsp minced jar garlic
1/8 tsp salt

Directions:

If desired, peel the squash.  Then rinse to get the squash wet.  In a bowl, toss the squash, basil, garlic and salt.
Spread the squash on a baking sheet in a single layer.  Bake at 350 degrees for 30 minutes.

Simple Apple Crisp

This apple crisp is so easy to make yet everyone seems to love it.  It does not last long in our house !

As you can see, this is not a low-fat dessert !!

In a baking dish, place 4 cups of sliced apples (granny smith apples work really well in this recipe).

Pour 1/4 cup of water over apples and then sprinkle 1 tsp cinnamon on top of the apples.

In another small dish, mix 3/4 cup flour, 3/4 cup sugar, and 1/3 cup earth balance.  Drop mixture over apples.

Bake at 350 degrees for 50 minutes.

Doesn't he see everything I do and every step I take ?
