Strawberry Coconut Banana Smoothie (DF, GF)




This is Day 9 of my Daniel Fast.

This is a thick smoothie, I actually eat it with a spoon !!!  Strawberry and banana is such a GOOD combination !!!



Ingredients:
3 very ripe bananas, sliced
1 cup partially frozen strawberries 
1/4 cup  Unsweetened Shredded Coconut  (I use Bob's Red Mill)

Directions:
Put everything in a blender and blend until desired consistency. 


My favorite food processor is the KitchenAid  7-Cup Food Processor. 

For blenders, I use both the  Vitamix Blender and Ninja Master Prep Professional Blender

Garlic French Fries (DF, GF)





This is Day 8 of my Daniel Fast.

I'm on a french fries kick, so I've been trying out different french fry flavors!!!  My husband and I both LOVE eating french fries !!!  This is the Garlic version.

The verdict is in !!!  We like these and the BBQ Fries the best !!!!

The starch on the outside of the potatoes keeps the fries from getting nice and crisp. The outside can burn before the inside is soft - also giving the fries a "thicker crust". Eliminating the excess starch also keeps the potatoes from sticking together. The corn starch helps draw the moisture from the potatoes to help get a crispy outside.






Ingredients:
2 large white potatoes, cut into french fries
1/2 tsp paprika
1 tsp minced jar garlic
1/2 tsp garlic salt or salt
1/2 tsp corn starch
--------
1 tsp minced jar garlic

Directions:
Place potatoes in cold water after cutting to reduce the starch.  Let them sit in the cold water for about 10-15 minutes.  Then drain off water.  Rinse the potatoes a few more times to get the visible starch off the potatoes.

Put the potatoes and other ingredients (EXCEPT 1 tsp garlic) in a plastic bag and shake well so the potatoes are evenly coated.

Lightly spray a baking sheet with oil and arrange potatoes in a single layer on the baking sheet.

Bake at 450 degrees for about 30 minutes or until golden brown.

After the potatoes are done, but them in a bowl or bag and combine with 1 tsp minced jar garlic to coat the potatoes.

BBQ French Fries (DF, GF)





This is Day 7 of my Daniel Fast.

I'm on a french fries kick, so I've been trying out different french fry flavors!!!  My husband and I both LOVE eating french fries !!!  This is the BBQ version.

MMMMMMM...These are good !!!!  A little on the spicy side, so reduce the chili powder to 1/2 tsp if you don't like things spicy !!!!

Salt and Vinegar French Fries (DF, GF)





This is Day 5 of my Daniel Fast.

I'm on a french fries kick, so I've been trying out different french fry flavors!!!  My husband and I both LOVE eating french fries !!!  This is the salt and vinegar version.

The starch on the outside of the potatoes keeps the fries from getting nice and crisp. The outside can burn before the inside is soft - also giving the fries a "thicker crust". Eliminating the excess starch also keeps the potatoes from sticking together. The corn starch helps draw the moisture from the potatoes to help get a crispy outside.






 Ingredients:
2 large white potatoes, cut into french fries
3 Tbsp white vinegar
2 to 3 cups cold water (enough to totally cover the potatoes)
--------
1/2 tsp corn starch
--------
1 Tbsp white vinegar
1 to 2 tsp coarse salt (depending on how salty you want them)

Directions:
Combine the water and 3 Tbsp vinegar in a bowl.
Place potatoes in the water and vinegar mixture and soak for 30 minutes. Drain potatoes.  Toss the potatoes with the corn starch to coat the potatoes.

Lightly spray a baking sheet with oil and arrange potatoes in a single layer on the baking sheet.

Bake at 450 degrees for about 30 minutes or until golden brown.

After baking, mix the potatoes with the salt and 1 Tbsp vinegar so the potatoes are evenly coated.

Daniel Fast Chocolate Coconut Peanut Butter Smoothie (DF, GF)




This is Day 4 of my Daniel Fast.

I did a slight modification of this recipe to come up with a Daniel Fast version.  This is a thick smoothie, I actually eat it with a spoon !!!  I sprinkle coconut on top...you can never have too much coconut !!!


Ingredients:
2 or 3 very ripe bananas, sliced 
2 Tbsp Unsweetened Shredded Coconut  (I use Bob's Red Mill)
2 Tbsp peanut butter (no sugar)
1 or 2 Tbsp Hershey's Unsweetened Cocoa Powder
2 Tbsp unsweetened almond milk or water
1 or 2 Tbsp date syrup

Directions:
Put everything in a blender and blend until smooth and creamy.  

My favorite food processor is the KitchenAid  7-Cup Food Processor.

Chocolate Coconut Peanut Butter Old-Fashioned Overnight Oats (DF, GF)




This is Day 3 of my Daniel Fast.

I modified my recipe for Chocolate Coconut Overnight Oats  to come up with this recipe.  I sprinkled extra coconut on top of the oatmeal.

I forgot to buy unsweetened almond milk for the Daniel Fast, so I had to come up with a recipe using water.  



Ingredients:
1/2 cup Quaker old fashioned oats
3/4 to 1 cup water
1/2 banana, mashed
2 Tbsp Unsweetened Shredded Coconut  (I use Bob's Red Mill)
2 tsp Hershey's Unsweetened Cocoa Powder
1 tsp Chia Seeds (I use Bob's Red Mill)
1 tsp Ground Flaxseed (I use Bob's Red Mill)
1 tsp ground cinnamon
2 dates, chopped
2 to 3 Tbsp peanut butter (no sugar)
2 Tbsp date syrup

Directions:
Put all the ingredients into a jar with tight fitting lid and shake until well combined.  I use an "old" 16-oz glass peanut butter jar.  Then refrigerate overnight or for a few nights.  I had mine sit in the fridge for 4 nights and it was delicious the morning I ate it for breakfast. 

Warm up in the microwave for about 90 seconds or eat cold.

Lentil Vegetable Stew (DF, GF)




Today is Day 2 of my Daniel Fast.

This is a thick soup/stew chocked full of lentils and veggies !  Both my dad and I REALLY liked this.   It did not last long !!!!


I made this in a 3.5 qt crock pot so I did not have room to add much additional liquid.  If I was making this in a 5.5 qt crock pot, I would add a couple of cups of water or veggie broth.







Ingredients:
2 cans lentils (about 3 cups of cooked lentils or about 1 and 1/2 cups dry)
2 cups of cubed potatoes
1 can diced tomatoes, with liquid
1 can sliced carrots, with liquid
1 can chopped spinach, with liquid
1 cup diced celery
3/4 cup chopped onions
1 bay leaf
1 tsp ground cumin
1 tsp basil
1 tsp oregano
1 tsp dried thyme
1/2 tsp black pepper
1 tsp dried parsley flakes
1 Tbsp dried minced garlic
1 Tbsp dried minced onion
1/8 tsp crushed dried red pepper


Directions:
Put everything in a crockpot and cook on low for 10-12 hours.

Apple Cinnamon Old Fashioned Overnight Oats (DF, GF)





Today is the 1st day of my Daniel Fast. 

I modified my recipe for Overnight Old-Fashioned Oats  to come up with this recipe.



Ingredients:
1/2 cup Quaker old fashioned oats
3/4 to 1 cup unsweetened almond milk (I use 1 cup)
1/2 banana, mashed
1/4 to 1/2 cup apple chunks (I use about 1/3 cup)
1 tsp Chia Seeds  (I use Bob's Red Mill)
1 tsp Ground Flaxseed (I use Bob's Red Mill)
1 tsp ground cinnamon
1 Tbsp date syrup

Directions:

Chocolate Pumpkin Quinoa Muffins (GF)




I have to admit, these weren't my favorite muffins (I'm not a big pumpkin fan !!!!) ....BUT... my co-workers really liked them and thought they were good...



Ingredients:
1/2 cup Oat Flour
1/2 cup Corn Flour
1/2 cup Tapioca Starch
2 tsp baking powder
3/4 tsp baking soda
1/4 cup Sucanat   (or brown sugar)
2 Tbsp Hershey's Unsweetened Cocoa Powder
1 tsp ground cinnamon
1/2 tsp ground ginger
1/8 tsp ground nutmeg
1/4 tsp ground cloves
1/2 tsp ground cardamom
--------
2 medium to large very ripe bananas, mashed
1 tsp vanilla extract
1 cup canned pumpkin puree
1 cup unsweetened applesauce (I had 2 small bananas, so I used 1 and 1/3 cups of applesauce)
1/2 cup cooked Quinoa 

Directions:
Mix the bananas, vanilla, pumpkin, applesauce and quinoa in one bowl. 

Mix the dry ingredients in another bowl.    

Add the dry ingredients to the wet ingredients and stir just until the dry ingredients are moistened.  

Pour into muffin pan and bake at 350 degrees for about 20-25 minutes or until toothpick inserted in the center comes out clean.  

I like using the silicone bakeware for my muffins.  The muffins  come out so easily and I don't need to grease the pan.  My favorites are:   Casabella Silicone Standard Muffin Pan, Casabella Silicone Large Muffin Pan, Casabella Jumbo Muffin Cups.

The OXO Large Scoop  is GREAT for scooping out batter into the muffin pan.  It is MUCH neater than when I used a spoon to scoop the batter into the pan - I no longer get batter all over the muffin pan !!!
