Pinto Bean and Corn Tomato Salad





This is Day 10 of my Daniel Fast.

This salad is great for a side dish or for lunch.  




Ingredients:
2 cans pinto beans (no added sugar), drained and rinsed 
1 can corn (no added sugar), drained
1 can diced tomatoes (no added sugar)
2 stalks celery, chopped (optional)
1 small bell pepper, chopped (I used 1/2 orange and 1/2 red)
1 small onion, chopped
2 Tbsp dried parsley flakes
2 Tbsp dried cilantro flakes
1 Tbsp lemon juice
1 tsp minced jar garlic
1 tsp chili powder
1/4 tsp ground pepper
1/4 to 1/2 tsp crushed red pepper (depending on how spicy you want it)


Directions:
Mix everything together in a bowl - serve immediately or after it has been in the fridge.  I thought it tasted better after it had been refrigerated first.
